Egg Yolk “Bread” with Goat Cheese, Marinated Radish and Hemp Seeds

In many countries there are a lot of simple recipes for leftover bread. One of the sweet variations is French toast (or in Germany “Arme Ritter”), which is bread soaked in milk an egg. In Hungary this dish is typically served as a savory meal under the name “bundás kenyér”, which translates to “a bread with coat”.

I’ve been following the blog of the ingenious Dave Arnold for several years now. Back in 2009 he posted a recipe of an egg yolk bread, which I was able to try only now, since I haven’t had a pressure cooker. The “bread” consists of egg yolk, salt and baking powder only – so no flour, no yeast, no nuts, no milk. It is great when freshly “baked”, but it really surprised me when toasted in butter. This egg yolk “bread” perfectly resembled both the texture and the flavour of the aforementioned Hungarian leftover meal – although in this case without the “coat”.

Poached Egg with Grilled Asparagus Sauce

About one year ago, when Phaidon released the revolutionary cookbook Noma by René Redzepi, they also prepared a few short videos for promotion purposes. These short videos show Redzepi foraging and cooking four of his dishes – which actually aren’t featured in the book itself. The videos and the book both try to transmit and deliver the path to the development of new dish and the main idea behind the restaurant Noma.

Caribbean Coconut Kaiserschmarrn

What if Austria was located in the Caribbean? Perhaps, it could be a nice tropical island. Well, obviously you wouldn’t plan your ski holiday there. Apart from winter sports and from a more culinary viewpoint, Austria is most famous for its huge variety of delicious pastries. Perhaps one of the simplest and most popular desserts is the so called Kaiserschmarrn: a light and fluffy batter made with separately beaten eggs, which results in something between a soufflé and a pancake. According to the story of this dessert, it was first prepared and served for Emperor Franz Joseph I during the 19th century, who also gave the name to this dish. Now imagine the Austrian Emperor Franz Joseph I and his beloved wife Sissi sitting at the beach under a palm tree somewhere in the Caribbean. Obviously they won’t be eating their Kaiserschmarrn with apple puree, but rather use tropical fruits instead, like coconut, pineapple or passion fruit. Maybe the result would look somehow like this Caribbean Coconut Kaiserschmarrn.
